Mum's Stuffed Boiled Eggs

Mums Boiled Stuffed Eggs. These are quick and easy to make handy as a starter, side dish or part of a typical open sandwich spread for all occasions.
A few notes before we begin.
- Most Polish cooking is a faff and takes a fair bit of effort, its not difficult just a lot of preparation and messing such as peeling, chopping so its not worth making just a small amount for 1 person. All mums portion sizes are suitable for a family of 3 or 4 people. They are quite filling, healthy and wholesome you wont leave hungry trust me.
- Please ensure you buy good ingredients, choose large free range eggs if you can and good quality Mayo.
- Usually 1.5 eggs per person as a rough guide.
Ok shall we start then?
Ingredients:
5 Large eggs
1 Medium Jar Mayonnaise
1-2 Spring Onion strands
Seasoning
Method:
Wash your hands often
Choose a suitable mixing bowl or similar.
Take 1 or 2 spring onion strands, wash them and slice finely. Drop into the mixing bowl.
Select a large enough saucepan for the number of eggs you have (assume 5 here).
Bring to the boil and let it cook for at least 5 mins to ensure they are hard inside.
Remove from heat, drain the hot water and fill with cold water, leave for a few mins.
Peel the shell off, rinse the eggs under water (pet hate egg shell shards)
Cut the eggs in half (either way you prefer).
Using a small teaspoon tease out the egg yoke into the mixing bowl with the spring onions. Repeat for all eggs.
Add a pinch of black pepper and mix the dry ingredients together so they have an even texture.
Add 2 Tablespoon of Mayonnaise to this mixture (for 5 eggs) more will be required for larger numbers. The consistency should be of cold custard!
Scoop out an amount of the mixture to fill the hole left in the egg white and slightly proud. Repeat for all eggs.
Add a drop of Mayonnaise onto the top of the egg. For decoration add a small off cut of spring onion in the middle.
That's it!!
Sadly I have never found a nice way to present these without them tipping on their side, but you can use red pepper slices and place the eggs in the middle, sometimes works.

Serve:
Serve with a few thick Sourdough bread slices with butter.
Very easy although the house will have an aroma of boiled eggs for a while!
