Mum's Polish Kitchen - Krawczyk stuffed pancakes - nadziewane naleśniki.

Mum's version of a classic, filled pancakes.
Her own recipe pancakes with a delightful stuffing that I tried to recreate from educated guesses and knowing how mum loved her quality ingredients.
These were a huge hit everytime.
It is not worth making 2 or 3 pancakes because of the effort involved and stinking the house out with hot oil, be brave embrace quantity you can offer these to your friends too especially on Shrove Tuesday.
You can skip the pancake making part and cheat with packet mix but honestly it's peasy and quick to make save your money.
Ingredients:
Ingredients list for about 6-10 pancakes subject to how thick you want them and size of pan.
I used a cast iron 10 inch diameter frying pan (25 cm) and thicker pancakes (who wants to eat paper!) so I doubled the below amounts to make 10-12 at these quantities.
For the batter
100 grams plain flour
2 large eggs
300ml (1/2 uk pint) milk
pinch of salt
1 teaspoon of vegatable oil
For the filling
2 large eggs
2 teaspoons of Arak flavouring
2 tablespoons of sugar
1 or 2 pots (300 grams) of cottage cheese. Don't buy a cheap ultra low fat get a decent brand like Dunsters farm, as its too watery. (1 pot for small numbers (1 egg), 2 pots and 2 eggs for larger quantites)

Method:
Make the batter
Mix the eggs, salt, oil, milk and flour very well in a jug, using a fork. Place it to one side for about 30mins or so.
Filling.
Place the cottage cheese in a small bowl. Add the egg (eggs) Arrak and sugar too. Give it a good mix with a fork.
Make the pancakes
Heat a frying pan and back off the heat a little. Drizzle some oil onto the pan swirl it around until it coats the base.
It should be hot not smoking. Quickly pour some of the batter mix into the middle of the pan, swirl it quickly to spread it around to get a nice pancake.
When the edges start to lift a little (about 20-30 seconds , you can usually lift it with a wide spatula, see if the underside is starting to go a bit darker, if so use the spatula to flip it over to cook the top side. Add a smidge of oil if required to keep it from sticking. Another 30 seconds and slide it onto a plate. Repeat for the rest.
You can let them cool down, put cling film on them and store them in the fridge for a day or 2 if you like, they would last about 3 days at mums, assuming they were not eaten beforehand.
Make the stuffed pancakes.
Pre heat the oven to about 200 degrees C.
Put some greasproof paper on a metal tray.
Taking one of the pancakes, lay it on a side plate. Subject to how big the pancake is take 2 or 3 tablesoons of the cottage cheese filling and lay it into the middle of the pancake. Now like a spring roll or pastry parcel, fold and roll the pancake around the filling ensuring the edges fold in to stop the cheese from escaping. Lay it on the tray and sprinkle with cinnamon and brown sugar. Don't be shy put a lot on.
Repeat for the rest.
Now place the tray in the hot oven but maybe reduce it a little and keep an eye on it. 15 mins should be enough however my oven is either nuclaear fusion or raw, so I kept turning mine around. You want the egg in the cheese mix to set but not so much you are making an omlette!
Serve:
Let them cool for a little. I would sprinkle more sugar on the top and that's it.
The house should now smell of cinnamon!
Warning they are quite filling and you can just have the sugar and cinnamon sprinkled on the pancake without the filling if you like, just as nice. Makes a change from boring sugar and lemon.
