Mum's Meat patties - Kotlety mielone.

Mum's version of a Polish staple. Kotlety mielone , basically meatballs in the shape of patties, extremely versatile.

A few notes before we begin.

Most Polish cooking is a faff and takes a fair bit of effort, its not difficult just a lot of preparation and messing such as peeling, chopping so its not worth making just a small amount for 1 person.

 All mums portion sizes are suitable for a family of 3 or 4 people and will last 3 to 4 days without going off. They are quite filling, healthy and wholesome you wont leave hungry trust me. 

Please ensure you buy good ingredients don't skimp on meat or cheap veg. 

Note to veggies: I have no idea if that Quorn stuff might be any use here? I would guess not as it may just fall to bits but give it a go?


Shall we begin?

Ingredients:

500g      Minced lamb, or pork but also beef or veal.
1              Onion
2-3          Eggs
1 pk        Breadcrumbs, Polish ones in Tesco are quite cheap.

Salt, pepper, mixed herbs
Olive or sunflower oil.


Method:

Wash your hands often.


In a mixing bowl place the meat, 2 eggs, mixed herbs, some salt and pepper together. 
Grate the Onion in.

Mix everything then start to add the breadcrumbs to the mix, until it becomes thicker and begins to stick together almost like a dough.

Use a large heavy frying pan add the oil and let it warm up. 

With a large spoon take some of the mix and form it in your hand so you have an even pattie, try to keep it roughly the same thickness then drop it in the pan, repeat for the rest of the mixture.

It takes about 8-10 minutes each side, but this is dependant on the meat, how thick the pattie is so just keep checking, you want it to go brown on both sides. Remove to a plate and that's it.

I tend to use minced lamb or pork, but you can mix either half and half.

There are variations that I experimented with, add some tomato puree, splash of tabasco, some paprika, fresh herbs, all these lift it up.


Serve:

Usually I serve with salad potatoes, sour cream and cucumber but its equally good with other food.

Try it in a bun like a hamburger.  

Horse raddish or mushroom sauce with potatoes and sourkraut.

Let it cool then cover and place in the fridge they will keep for a few days, handy for picnics.
